At Sushi Ashino, every piece of sushi is a testament to Chef Taku Ashino’s mastery, refined over years of dedication to the craft. His philosophy is built on three fundamental tenets: aging, shinkejime and shari, each playing a vital role in shaping the restaurant’s signature experience.

A Decade of Mastery

About Chef Ashino

Born in Tokyo, Chef Ashino’s early years were spent not in a kitchen, but on a path of personal and spiritual discovery.

His pilgrimage across Japan — from Tokyo to Aomori and through the 88 temples of Shikoku — shaped his worldview and led him to a deeper appreciation of nature, discipline, and balance. This journey ultimately brought him to sushi — a craft that perfectly mirrored his own values.

This year, Chef Ashino marks 10 years of bringing Jukusei sushi mastery to Singapore. Inspired by the standards of legendary sushi houses in Japan, Chef Ashino’s approach combines discipline, heritage, and innovation.
